Procrastination takes many names and faces, and for me personally, I'd have to say the kitchen is the best of all.
Don't get me wrong, I love to cook and bake anyway, but I must admit that when I have something I'm avoiding getting done the kitchen is where I can lose myself.
In winter I find myself baking more muffins. I guess it's the perception of them being big and hearty, to fill me up and keep me warm.
Whatever it is, I like it!
I am going to let you in on a little secret...my muffin recipe.
Orange & Poppy Seed Muffins
250g softened butter
250g castor sugar
250g self-raising flour
50g poppy seeds
4 large eggs
1 tsp orange essence
2 oranges' zest
Preheat oven to 180ÂșC.
Beat butter and sugar until creamy.
Add eggs one at a time, beating in between additions.
Mix in flour.
Add the rest of ingredients and mix.
Grease a large muffin tin (or use liners.)
Spoon in mixture.
Bake for 30-35 minutes or until ready (poke one with a wooden kebab stick, they are ready if it comes out without any muffin mix sticking to it.)
*These can be served warm with a dollop of cream cheese icing sprinkled with a few poppy seeds.
